Blogging has been so critical in my recovery so far. Even though it's only the third day after my knee surgery, I've been feeling all kinds of different emotions. I'm doing a lot better, though. I'm getting around on my crutches better; I can stand up on my own. There's no way to go but up from here. Although, I have been experiencing very mild "depression", I guess you could say. I'm not 'clinically' depressed, but I do feel down sometimes; mainly because there are so many things that I really just cannot do YET. I did say yet, because I will be able to do them again. It's a struggle getting in and out of the car, so I don't go many places. My family has been catering to my every need (thanks so much), but it really makes me feel somewhat helpless. I'm so freaking used to being able to do everything on my own, and now I just need help with everything though. I just don't feel too great right now. I do know that everything will get better though, and I'm gonna keep my head up and get through this recovery. Just a few thoughts :) Thanks for reading, and thanks for the support.<br />

Just wanted to let those who read this blog (I don't know if anyone even does), that my surgery went well. I got it done yesterday afternoon at Lexington Hospital. As it turns out, the ACL Reconstructive Surgery is the most painful surgery that they do at that hospital. I was so nervous in pre-op that they had to give me a sedative to calm me down. Then, they did a 'nerve block' on my whole left leg, which completely numbed it. I don't remember too much after that. They put me to sleep, and then I remember them trying to wake me up after surgery. All in all, the surgery was a breeze. The only issues I had with it was nausea. After surgery, I drank some ginger ale and some water, and couldn't hold it down. According to my surgeon, that's normal for people who've never had anesthesia before.<br />
<br />
Today is day one of post-op. I've had moderate to severe pain in my knee, mainly because they used my patellar tendon bone autograft, instead of a hamstring tendon autograft. I have been prescribed to percocet and a nausea medicine (painkillers make me sick), which has been helping SO much. My family has been so lovely to me. They've been helping me out a LOT, which is making my recovery a lot smoother. I'm supposed to take this knee immobilizer off twice a day and do knee exercises for 30 minutes. I did some of that today, and it really made my knee feel good, surprisingly.<br />
<br />
In 10-14 days, I have a follow-up appointment with my orthopaedist. After the follow-up, he'll more than likely put me in a physical therapy program. PT is the only thing that worries me. I've never had it before, and I'm really afraid that it'll hurt bad. Even if it does, I know it's intended to help strengthen my knee.<br />

Thanks to EVERYONE who's supported me and prayed for me. It all helped. I know that I've got loving people around me to lift my spirits when they're down. Thanks to all!<br />

</div>Recently, I've bought some vegetarian and vegan organic face washes and lotions. Yes. I didn't know that they had VEGAN lotions and face washes. I knew that there was cruelty-free products, but vegan?! I was so amazed by this when I saw it, I just <b>had</b> to buy it. So, I did. The products that I purchased are by Full Circle. Full Circle makes all kinds of organic foods; everything from baby food to frozen organic fruit.<br />

I got the Full Circle Papaya & Soy Milk Natural Foaming Facial Cleanser. It smells really, really good, and gives your skin a natural glow. It's 100% Vegan and cruelty-free. All of the ingredients are organic, which is always a plus.<br />
<br />
I also bought the Full Circle Nighttime Renewal Cream. It's 100% Vegetarian, cruelty-free, and, like the facial wash, is completely organic. These products are really great and I highly recommend fellow vegans/vegetarians to try them. They are, however a bit costly, depending on where you go. I paid a good sum for them where I went. Just sayin'.<br />

Who would've known that finding Vegan products is <b>way</b> easier than most people think. All you have to do is look for it, and chances are, you'll find it! Take care.<br />

</div>Hello there, everyone! Tonight is Vegan MoFo Day 3! The recipe that I have to share with everyone is a Vegan Spaghetti. Everyone's sure to love it. My omnivore family loved it. Yes, I am cooking for an omni family (which is a little difficult, because they expect <b>everything</b> to taste like meat). Anyways, this was a huge hit with them, and I thought it was fabulous as well! Recipe is as follows: <br />
<br />
<b>Vegan Spaghetti</b>- serves 6 people<br />
1 66 oz jar of Ragu World Favorites Original Spaghetti Sauce (I checked the ingredients- no meat by products)<br />
1 pound box of fettuccine noodles, or whatever type you prefer (whole grains is better)<br />
1 pound Smart Veggie Sausage<br />
1/4 cup vegetable oil <br />
1 tsp. onion powder<br />
1 tsp. Italian seasoning<br />
salt<br />
pepper<br />
<br />
1. Heat skillet on medium-high until warm. Add 1/4 cup vegetable oil. When heated, add Veggie Sausage. Break up into pieces with spatula, and cook until golden brown.<br />
2. Pour in all of spaghetti sauce with the Veggie sausage. Turn the heat down to medium. Add 1 tsp. onion powder, 1 tsp. Italian seasoning. Salt and pepper to taste.<br />
3. Boil 6-8 cups water (I don't measure the water exactly). Add noodles. Continue to boil until al-dente.<br />
4. Drain noodles when finished cooking.<br />
5. Serve and enjoy!<br />

The best part about this dish, was that the veggie sausage actually tasted and smelled extremely similar to pork sausage. This is good for new vegans, like myself, who are used to eating meat.<br />
<br />
An issue that I've noticed with myself, is that I am having a hard time weening myself off of cheese and eggs. I was able to completely cut out the milk, but for some odd reason, I'm seeming to have a difficult time leaving out the eggs and cheese. Not sure why. I really love cheese, and the vegan substitute doesn't even look like cheese. I'm a little nervous to buy it until I know that it's worth my dollar. In South Carolina, especially the town that I live in, specialty vegan foods are a bit more expensive than regular foods. More tomorrow!<br />

</div>So, today's the second day of Vegan MoFo (Vegan Month of Food). It's going through the month of October. We vegans are supposed to blog every single day and post a new recipe each day. It sounds so awesome to me, since I'm basically a vegan foodie. <br />

I got this book today at the bookstore. It's called The 30 Minute Vegan by Mark Reinfeld and Jennifer Murray. I'm really excited because it has <b>wonderful</b> vegan recipes in it. Today is the day for everyone to celebrate the plentifulness of the earth's splendor! I feel really proud because my sister has decided to become vegetarian, thanks to me! Since I'm the household chef, my changes in diet has effected everyone else... it has basically forced everyone else to try new and interesting foods that they wouldn't have normally tried. Today also marks my two weeks into vegetarianism. Go me!<br />

Since then, I've been making tons of smoothies and milkshakes. Milkshakes are actually better with soy milk. (I like soy milk better anyway). Today, I tried a green smoothie, using greens (I used romaine), and it didn't turn out too great. Maybe I didn't do it right... Not sure...<br />

</div><div style="color: cyan;">I've also found that the Food Lion here has a TON of vegetarian/vegan-friendly foods, to my surprise. To my knowledge, there aren't many vegans here in Irmo, SC.... I even found Vegenaise. Really surprising. Whilst adventuring through the forests of Food Lion, I realized that in every aisle, they have a natural/organic section, which has the veg versions of the stuff on the aisle... Pretty amazing. The organic produce was actually cheaper than the non-organic. Most organic foods here are more expensive, unless you buy from a local farmer's market. The only farmers market here, is about a 30 minute drive from where I live. Not too bad...<br />

</div><div style="color: cyan;">I've even started using organic shampoo and conditioner. Teatree mint by Organix has a good kind. Their products are NOT tested on animals, and really good for your hair. They are quite a bit more expensive than regular shampoos... but I figured anything was worth trying once... I've started using Aveeno lotions... mainly because they're nautral. I'm not too sure if their products are tested on animals... I'll research that one.<br />

</div><div style="color: white;">Last night, for supper, I made portabella burgers. I used the portabella mushroom as a replacement for a meat patty. I then sauteed them in a hot pan with lots of margarine. You'd be surprised, margarine gives portabellas a wonderful flavor. I then layered the portabella on the bun, along with provolone cheese, lettuce, tomato, and cucumber slices. It was very filling and energizing.<br />

</div><div style="color: white;">This morning, I made a breakfast burrito. I used a flour tortilla (whole wheat is also acceptable) in this recipe. I then scrambled 2 eggs, and added shredded cheddar cheese, and I cooked it on warm until the cheese was melted. I heated my tortilla in a warm skillet, and sprinkled some shredded cheese on the tortilla until melted. I then put the cheesy scrambled eggs on top of it... and folded the tortilla as you would a burrito. Serve with salsa and a sliced orange.<br />

We were talking, and I told her about my diet changes to vegetarianism. She tried to be vegetarian for a week, and was unsuccessful. Some people think you HAVE to eat meat to survive, but it really is not the case whatsoever. So, her boyfriend knew that I'm vegetarian, too. He started talking about how good a steak would be, and how he really wanted some venison. It started to offend me. What's weird, is when I ate meat, I would've been like, "Hell yeah, that sounds awesome". But, last night... it just disgusted me. I politely asked them to change the subject because my stomach was beginning to turn. They didn't. A few minutes later, I began to get a little angry; mainly because these people that were supposedly my "friends" couldn't respect my morals. I chimed in and said, "Yeah, some stir-fry veggies and tofu over some rice WOULD be amazing, wouldn't it?!" When I said that, they bothed LAUGHED at me. I was SO offended; it was ridiculous.</span><br /><br /><span style="color: rgb(153, 255, 255);">If you're a vegetarian/vegan, I know that you've been through the same experience, and there is nothing in the world like this feeling. The feeling that your own "friends" don't respect your beliefs, when you're expected to respect theirs. In my eyes, that is unfair, and offensive. If people in the world don't want to eat meat, omnivores should respect their decision, just as vegs respect omnis' decision to EAT meat. It works both ways. Seriously, people.</span><br /><br /><span style="color: rgb(153, 255, 255);">I get so frustrated with some people sometimes. I guess they thought I was trying to convert them to vegetarianism. Sure, it'd be nice if more people steered away from meat, but that's not my goal. All I ask for is open-mindedness and respect. That's it. Is that SO hard to give to someone? I think not. If I can be open-minded to new things, so can others. It was SO good! I got the original recipe from my boyfriend's mom. She's not vegetarian, but it's a vegetarian dish. I put a slight twist on it, though. It was absolutely amazing. I'm so pleased. I think the best vegetarian dish that I've ever made is my eggplant parmesan. Now, that is one amazing dish. No, it's not vegan, but it IS vegetarian... and quite delicious at that.</span><br /><br /><span style="color: rgb(255, 255, 153);">To my surprise, the grocery store actually has more vegetarian/vegan-friendly food than I thought. It's funny- before you're vegetarian, you never realize how many foods acutally don't contain meat products and byproducts. I'm starting off as a vegetarian, and then I plan to convert to veganism.</span><br /><br /><span style="color: rgb(255, 255, 153);">Like I said, I never ate THAT much meat when I was an omnivore. Therefore, that's how I knew that I could do this transition. I've got my sister ADDICTED to chocolate soy milk. To me, that's an accomplishment... mainly because she loved cow milk more than anything. Same thing with my boyfriend. He literally told me today that soy milk was better than cow milk! I'm new in the vegetarian community. Today marks my 3rd day into vegetarianism, and I'm sooo proud! I'm going to explain my reasons for choosing this life-changing decision.<br /><br />1. I've seen animal suffering and exploitation, and it bothers me.<br />2. I've been wanting to become a vegan for a long time now, and finally decided to do it.<br />3. I have never really eaten that much meat anyways, so I knew that it wouldn't be a difficult adjustment.<br />4. Every time I look at meat now, I get slightly disgusted.<br />5. Health reasons: Heart disease, and strokes run in my family. I don't need another reason to die young.<br />6. Before, I've gone a while without eating meat (as a dare), and I actually felt lighter and more energetic.<br />7. I want to help save our earth.<br /><br />These are just a FEW reasons why I have decided to become a vegetarian. Luckily, my boyfriend (non-veg), and my family (non-veg) are very supportive of my decision. I've actually gotten them to try soy milk, tofu, and veggie burgers!<br /><br />I'm going to be continuously blogging my emotions, experiences, and thoughts.
